Butcher – Azadea Group

Role Purpose
The Butcher is responsible for cutting , trimming , boning and grinding meat using butcher’s cutlery and powered equipment . He / she cuts , weighs and chops steaks for individual servings . He / she receives , inspects and stores meat upon delivery and records quantity of meat received and issued to cook .

Key Accountabilities
Check that products needed for his service station are on hand according to set par level and perform the order of the products from the internal store
Receive food orders and prepare requested meat items and their display as per the outlined recipes, the HACCP standards, the portion control practices, and the items’ presentation guidelines
Cut trim, bone, grind, portion, weigh meat and ingredients, and mixes them according to requirements
Identify and label types of cut and indicate date and storing conditions
Ensure sanitation of work station at all times during the shift by cleaning the fridge, shelves and counter, sharpening knives and cleaning utensils upon end of shift
Assist and help customers as per the sequence of service set by the company and SOP’s
Maintain good product items knowledge in order to answer any customer or colleague inquiry
Check the shelf life of products, tag the production/expiry date on each product, monitor wasted product figures, and estimate needed supplies

Qualifications, Experience, Knowledge
0-1 years of experience in F&B operations in a similar role
Knowledge of different butchery specialty items
Fluency in English
High School Degree is a plus
